But, without a doubt, my favorite part of the Hospes Palacio del Bailío is its outdoor pool. The pool, which is open all year round, is not heated, but it doesn’t need to be. With the warmth of Córdoba in the spring and summer, it’s impossible to resist a good swim.

The pool is surrounded by aromatic plants and orange trees, making it the perfect refuge from the high temperatures. Therefore, you can alternate between sunbathing on a lounger and relaxing in the shade with a cocktail from the bar.

The hotel’s restaurant has a terrace and bar and, which is no small feat, views of the remains of a Roman villa.

And since what we often remember most about many trips is what we eat, I have excellent memories of the hotel’s breakfasts.

You can choose from cold cuts, cheeses, Spanish omelets, vegetables, and bread to pastries like Neapolitans (pain au chocolat), croissants, cakes, and fruit. They also prepare coffee for you, which is essential, as well as eggs cooked to your preference and other hot dishes. I chose churros with chocolate and paired them with Mimosas (Cava with orange juice), which are synonymous with vacation for me. You can have breakfast inside the restaurant or on the terrace.

The Arbequina Restaurant & Tapas Bar stands out for its variety. On the one hand, the restaurant offers a menu with traditional city recipes, such as the Salmorejo cordobés.

On the other hand, Arbequina serves gourmet dinner dishes that blend tradition with the latest culinary techniques. The burrata appetizer and the pasta were delicious. Additionally, the wine list is very comprehensive.

If you spend the day by the pool, you can order snacks, beers, and cocktails at the bar. This is perfect for when the temperatures make you reconsider how much you want to explore the city.
